Using up some veggies

Where does the time go?  I can’t believe it’s already 10:00!  

Here’s a quick recap of my day.  
Breakfast – Multigrain Arnold’s Sandwich Thin topped with Barney Butter and a small banana
Morning snack – Cashew Cookie Larabar
Lunch – mini apple
And another multigrain sandwich thin topped with a garlic & herb laughing cow wedge, organic turkey, sprouts, and romaine.
I may have also had some fries with my lunch.  I don’t have a picture because I didn’t take my camera to work.
Lately I have been so unmotivated to work out.  I have been getting my cardio in, but I haven’t done any weights all week.  I told myself this evening that I only had to do 20 minutes and then I could leave.  That’s exactly what I did, 22 minutes on the Arc Trainer.  My heart rate monitor said I burned around 300 calories, so I did at least push myself in my short little cardio session.  

By the time I got home from the gym and showered, it was 9:00.  Because I was so short on time, I threw together a quick stir fry for dinner to use up some veggies that I’ve had hanging out a little too long.  
The stir fry contained - 
  • frozen tri color peppers
  • frozen green beans
  • 1/2 bag broccoli slaw
  • 1 green bell pepper
  • cashews
  • a sauce made with sesame oil, soy sauce, and rice wine vinegar
I put half of the veggies aside for tomorrow, and then threw some defrosted frozen shrimp into the skillet to heat through.  I served the stir fry over a small portion of instant brown rice.  

I am so glad tomorrow is Friday!  Even though I had a four day weekend, this week has been seriously dragging.

    I am sure you motivation will come back soon. Sometimes I think our bodies just need a break! Maybe you could take a new class or something?

    Love the arnold’s thins. They’re buy 1 get 1 at my food store this weekend and I am totally thrilled. Winter makes it tough to workout- I blame the weather! I missed top chef last night, I hope to catch it this weekend. Love that show

    hey 22 minutes is better than nothin! Your stir fry looks soo good, i love cashew chicken, but with shrimp?? i have to try that.

    Your sandwich and stir-fry look delic … yum!!

    I undersatnd the working out thing … I’ve been going through a working out slum myself, feeling very unmotivated. Last night, I just went for it though and had a great workout and felt great afterwards! So I’m hoping that I’ll remember how good I felt and be motivated now!

    Your sandwich seriously made me drool a little. I always forget how much I love sprouts until I see them.

    I hear you on the week dragging, too. How can a 4 day week seem this loooong?

    I’ve still never tried the Sandwich Thins… I’m so behind!

    Don’t worry about the motivation to work out… it usually comes in spurts and I’m sure you’ll get it back!

    sprouts! I forgot about sprouts! I used to eat cream cheese, avocado and sprout sandwiches. wow- holy artery clogging.
