Hello!
Thanks for all the well wishes! I’m feeling a little better, but still a little queasy. I think I should be good to go tomorrow morning. I have an early dentist appointment before work, so let’s hope so! This should hopefully be the final follow-up appointment in my wisdom tooth extraction saga.
For lunch, I had a sabra hummus, cheddar, and romaine sandwich on a wheat roll. After eating lunch, naturally I went back to sleep for a few hours. I feel like the best cure for most sickness is lots and lots of rest.

For dinner, I had what was supposed to be my raw snack of the day. I’ve seen this Holiday Chia Pudding featured on several blogs, and knew I had to try it! It was very simple to make, and tastes amazing! You can find the recipe on Kristen’s Raw. I highly recommend it!

Giveaway Announcement!
I’d like to spread the chia seed love with my readers, so I’ll be giving away a 1/2 pound bag of chia seeds from Chia Seeds Direct! Chia seeds are rich in Omega-3s and are a complete source of dietary protein. For more information on the health benefits of chia seeds, check out this article.
To enter, simply leave a comment on this post and tell me your favorite way to eat chia seeds. If you’ve never tried them, tell me what you’d like to make!
For a second entry, link back to this post on your blog. Please send an e-mail to thresholdofgreatness AT gmail DOT com letting me know you’ve done this.
The contest ends Sunday, May 10 at 8 pm Eastern Standard Time.
Good luck!

Hi Laura! I’m so excited that you’re going to be visiting Barboursville…its such a fun vineyard to visit and they have some really great wines. The restaurant there, Palladio, is supposed to be AMAZING, but I know that its also very pricey. Montpelier is very close, so if you’re up for a bit of history you should definitely check it out. Are you coming to Charlottesville? If so, email me and I’ll give you some recommendations for restaurants and other vineyards to visit. Have fun!!!
And, i’d love to try Chia seeds! The pudding would definitely be the first recipe I’d try… I hope I win some!

Cindy // September 12, 2009 at 1:00 am
I’m well over 50 and I have never tried or even seen a chia seed. I have never seen them in the stores.
I would’nt mind trying to make an energy bar with them and sunflower seeds, almonds, oats and honey.
And that pudding might be tasty too! With a problem with cholesterol it may just help. Enjoyed everyone’s posts!
